Packed with sweet, juicy flavors of pineapple and coconut, this Pina Colada Smoothie will bring you some holiday sunshine no matter the weather.

Years ago, when I first posted this recipe on the blog, I had just made this piña colada smoothie and stirred it into ice cream. I still remember how my little boys were jumping up and down with excitement.

They loved the refreshing sweetness of this ice cream during the hot Phoenix summer months. I like that it doesn’t have refined sugar.

I was on a bit of a smoothie kick at the time. But until then, I had never tried freezing smoothie recipes. The result is a creamy texture similar to soft serve ice cream.

Adding lime to this Pina Colada smoothie creates a unique flavor that is more complex than the simple combination of coconut and pineapple. And a pinch of sea salt enhances all the flavors as well.

Keep in mind that different manufacturers produce coconut milk with varying levels of creaminess and richness. My favorite is Thai Kitchen’s canned coconut milk.

I usually use store-bought frozen pineapple chunks for smoothies, but you can also freeze fresh pineapple chunks along with the bananas. You can also replace honey with another natural sweetener, such as maple syrup, but the flavor will change slightly.

Now, even if a splash of rum mixes into your smoothie and changes the taste, I wouldn’t know. Cocktail smoothies are truly delicious. That’s a good thing.

To make this recipe you will need the following ingredients:

  • thai coconut milk
  • frozen pineapple chunks
  • frozen banana chunks
  • honey
  • fresh lime juice
  • fine grain sea salt
  • Rum (optional)
Add all ingredients to blender pitcher with this pour shot.

Start by putting all the ingredients into a blender. Then blend until smooth and creamy. If you’re making a smoothie, pour it into glasses and serve immediately.

To make ice cream, pour the contents of the blender into an ice cream machine and process according to the manufacturer’s instructions. Scoop into a bowl and enjoy immediately after freezing.
