I first posted this recipe in 2009…2009…15 years. A lot has changed since then…we have expanded our family. We moved (3 times). We’ve gone from toddlers and tantrums to teenagers and we still throw tantrums 🤪. I think it’s only natural that this lasagna recipe will vary a bit.Now it’s better, bolder, everything homemade lasagna That’s how it should be.

Ingredients for hearty meat lasagna

We’ve broken down the ingredient list into three different parts of this recipe: the meat sauce, the béchamel sauce, and the items needed to assemble the lasagna. Here’s what you need:

meat bolognese sauce

  • butter and olive oil
  • Vegetables: carrots, celery, red onion, garlic
  • Protein: ground beef and Italian sausage
  • Tomatoes: roasted tomatoes, tomato sauce, fire roasted tomatoes (canned)
  • milk and cream
  • cooking wine
  • lemon zest and juice
  • Seasoning: nutmeg, bay leaf, salt, pepper

béchamel sauce

  • butter
  • flour
  • whole milk
  • nutmeg
  • kosher salt

please do not worry. There was no ricotta cheese listed in the ingredients list. In fact, we found we liked it better without the lasagna. Keep scrolling to the end of the post for measurements of each ingredient.

How to make homemade meat lasagna

To make meat sauce

  1. Prepare the bolognese sauce according to the instructions in that post and set aside.

For béchamel sauce

  1. Melt the butter in a saucepan over medium heat.
  2. Sprinkle in the flour and continue mixing until it forms a paste and becomes slightly bubbly.
  3. Slowly add the milk, whisking constantly. Once it boils, reduce the heat and simmer until the sauce thickens.
  4. Add salt, pepper, and nutmeg and mix.

For lasagna

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Prepare Parmesan cheese by pulsing it in a food processor or blender.
  3. Now, let’s assemble the lasagna. First, pour a layer of Bolognese sauce into a rectangular baking dish. Spread it around in an even layer.
  4. Add a layer of noodles, then another layer of meat sauce.
  5. Pour the béchamel sauce over the top and spread it evenly.
  6. Sprinkle with a layer of Parmesan cheese.
  7. Repeat these layers 4 times. Once you reach the top layer, add the meat sauce, béchamel and top with all the mozzarella cheese.
  8. Place a piece of foil sprayed with cooking spray on top of a baking dish.
  9. Bake for 25 minutes, then remove the foil and bake for another 25 minutes.
  10. Sprinkle with a final bit of Parmesan cheese and chopped fresh parsley (optional) and let the lasagna rest before cutting and serving.

Can I use regular lasagna noodles?

Yes, you can also use regular lasagna noodles if you have the time. Unboiled noodles are very easy to use, but they tend to soak up a bit of the sauce, so if you use noodles, add a little more.

To make regular lasagna pasta, bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8-10 minutes. Drain the noodles, rinse with cold water to prevent them from sticking together, and continue cooking. Then you are ready to start assembly.

Can lasagna be made in advance?

The entire lasagna can be assembled a day in advance. Simply store in the refrigerator until ready to bake. Since you’re baking from cold, you’ll probably need to add a few minutes to the baking time.

If you want to spread out the preparation, you can make the bolognese up to 4 days in advance, or you can make it and freeze it. Béchamel can be made up to 3 days in advance or frozen.

How long does lasagna last?

Leftover lasagna can be stored in the refrigerator for 3 to 5 days.to shop Cover leftover lasagna tightly with foil or place in an airtight container.

A long overdue update to this hearty meat lasagna recipe! I’ve been working on making this the best classic lasagna recipe ever, and this is finally it!

Prevent the screen from going dark

For béchamel sauce

  • Melt the butter in a saucepan over medium heat.

    4 tablespoons butter

  • Sprinkle in the flour while whisking and cook, stirring constantly, until the flour paste is cooked and slightly bubbly and tastes like flour.

    4 tablespoons flour

  • Add the milk little by little while continuing to whisk. Bring this mixture to a boil, then simmer gently over medium-low heat to thicken the sauce. Add salt, pepper and nutmeg. Reduce heat to low and simmer, stirring, for another 2-3 minutes. Remove from heat and set aside.

    2 1/2 cups whole milk; 1 teaspoon kosher salt, 1/4 teaspoon pepper, 1/4 teaspoon nutmeg

For lasagna

  • Heat oven to 375 degrees Fahrenheit.

  • Blend Parmesan cheese in a blender or food processor until reduced to 1 1/2 cups. Reserve 1/4 cup for topping.

    1 1/2 cups fresh Parmesan cheese

  • Cover the bottom of a 9×13 with 1 cup of meat sauce (avoid large chunks of meat).

  • It’s usually best to place the noodles three at the bottom of the plate, two vertically and one horizontally at the end.

    1 box of oven-safe lasagna noodles

  • Spoon 1 1/4 cups meat sauce evenly over the noodles, followed by 1/4 cup béchamel sauce. Using an angled cake knife or spoon, spread the two sauces evenly over the pasta.

  • Top with a heaping 1/3 cup of fresh Parmesan cheese and repeat four times.

  • Add the sauce and béchamel to the top layer, smooth it all out and add the mozzarella cheese.

    2 1/2 cups mozzarella cheese

  • Spray the foil with nonstick spray and place on top of the lasagna.

  • Bake for 25 minutes, then remove foil and continue baking until cheese is bubbly and speckled brown, about 25 minutes.

  • Sprinkle with the remaining Parmesan cheese, let rest for 10-15 minutes, and serve!
