I’ve eaten a lot of chicken salad in the past, but I wanted to try something a little different. This Asian chicken salad is packed with protein and delicious crunchy vegetables. It’s not only good for your appetite, but also for your eyes!

The best part is the salad dressing. The flavor of coconut aminos, garlic, and roasted sesame oil is exquisite. Maple syrup and honey are used to add a little sweetness.

  • Combine dressing ingredients in a 16-ounce mason jar with a lid. Soy sauce, rice vinegar, sesame oil, maple syrup, honey, minced ginger, minced garlic, and sesame seeds (if using). Close the lid tightly and shake well until all ingredients are thoroughly mixed. Let’s set it aside.

  • In a large bowl, combine the shredded chicken, red cabbage, Chinese cabbage, carrots, snow peas, and mandarin oranges (if using).

  • Pour the salad dressing over the salad ingredients, if desired (you may not use all of them), and stir gently to make sure everything is evenly coated.
