What is fleur de sel?

Fleur de sel is the purest form of salt. It forms when seawater evaporates, leaving a thin crust on the surface. Because it is pure, it is not bitter and adds flavor to dishes.

Since most people don’t have fleur de sel on hand, I think any other coarse salt, including kosher salt, will suffice.

  • Melt the butter in a Dutch oven or large deep-bottomed pot.

  • Add the whole potatoes, salt, pepper, 1/2 tablespoon dill, and garlic and mix well.

    1 pound fingerling potatoes, 1 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper, 1 1/2 tablespoons chopped fresh dill, 3 cloves garlic

  • Close the pot tightly and simmer over low heat for 20 to 30 minutes, shaking the pot or stirring with a wooden spoon occasionally, until the potatoes are tender with a small knife.

  • Turn off the heat and let the potatoes steam for another 5 minutes. Do not overcook.

  • Stir in the reserved dill, season with salt and serve warm.
